Place stew meat in a large pot, cover with water, and bring to a boil. Add basil and parsley. Lower heat and cook, covered, but a slow boil for 3 hours.
Cook noodles separately. Drain and add to beef broth. Add salt and pepper.
Bleu cheese goes and last, and cooks just long enough to melt completely. Do not boil.
Serves 8 to 10.
