Combine flour, sugar, and salt. Make a well in the center, break in the eggs, then add the extra yolk. Add 1/2 the milk gradually using a whisk. Beat lightly until smooth. Do not over-mix. Add the remaining milk and whisk gently until well combined. Cover and let sit for 30 minutes.
Stir 1/4 cup melted butter into batter before using.
Lightly brush 6" frying pan with remaining butter and heat until hot. Holding the pan, pour in 1/4 cup batter and tilt the pan from side to side so that the batter forms a thin, even layer across the bottom of the pan.
Cook over medium-high heat for about 1 minute or until edges brown and begin to curl. Flip and cook for another minute. Brush pan with melted butter as necessary, gently stirring the batter each time it is used. Stack on a wire rack lined with parchment and a clean towel. Fold the paper and towel over the crepe to keep it moist.
For Filling
Beat together cheeses, sugar, and vanilla extract. Divide and spread into each crepe. Fold two sides of the crepe over the filling towards the middle, and then roll up from one end and secure with toothpicks.
Melt butter in large frying pan till bubbling. Gently fry the rolled pancakes until browned, about 5 minutes. Do not over-heat the butter as it may burn. Serve with fruit sauce.
For Sauce
Thaw fruit if frozen. Blend all fruit and apple juice in blender or food processor until smooth. Put through nylon sieve, if preferred, and add maple syrup to taste. Stir well before serving.
