Make Fresh Tomato Juice: Place chopped tomatoes, shallot, celery and roasted hatch chilies in a blender or food processor and puree. This will likely need to occur in batches. Pass the pureed mixture in batches through through a food mill or through a fine mesh sieve, capturing the juice in a large container.
Make Mix: Add lemon juice, lime juice, grated horseradish, Worcestershire sauce, and celery salt to the finished tomato juice. Add salt to taste.
Canning Instructions: I am PRESSURE CANNING. Prepare pint jars and lids for normal canning use. I just put the mix in at room temperature leaving 1” head space. Make sure to wipe rims and DE-bubble. Place jars in pressure canner and can according to your altitude directions for tomato sauce. Mine happens to be 10# for 25 min. When they are done, remove jars and let sit.
Misc: The original recipe calls for rim seasoning such as smoked paprika, salt, fresh ground pepper and garnishes such as olives, pickled green tomatoes, lime wedges etc...
Notes: I would add more lemon and/or lime when I serve. Maybe add more salt next time and mess with the worcestershire and adobo sauce ratio to see if there is something I like better.
