Spray 4 200ml ramekins with cooking spray
2, bring a small pan of water to the boil and cook the broccoli for 5 mins until tender, drain and mash
3, melt the margarine in a saucepan, add the garlic and flour, and cook, stirring, for 1 minute until the mixture forms a ball.
Remove from the heat and gradually add the milk, stirring until smooth after each addition.
Return to the heat , stirring continuously until thickened. Season.
Cool slightly before beating in the egg yolks, broccoli and the cheese
4, in a clean bowl, whisk the egg white until stiff.
Add a spoon full to the broccoli mix rot slacken it, then fold the broccoli mix into the remaining white.
Spoon into the ramekins
5, place the ramekins in a roasting tin. Fill the tin with hot water until its about a third of the way up the side of the ramekins.
Bake for 20 mins until puffed up and golden on top.
Remove from the oven and leave to cool.
They will sink at this point, when cool, loosen and tip out, cooked side up, onto a a baking tray lined with none stick baling paper
6, for the second baking,preheat the oven to gas mark 4/180 degrees/160 degrees for a fan oven. Cook the souffles for 25 mins until puffed up again
Serve immediately
Use an electic whisk for the egg white and don't open the oven needlessly to check them
