Beat buttter with blue cheese, crumbled and black pepper at medium speed with an electric mixer until smooth. Add flour and beat until just combined; do not overmix. Shape dough into a log (about 1-3/4" in diameter. Wrap in plastic wrap and chill 3-24 hours.
Preheat oven to 375. Cut log into 1/4" thick discs and place an inch apart on a parchment lined baking sheet; sprinkle with additional black pepper. Bake until golden brown, about 10 minutes.
