1. Heat oil in a large pot over medium heat and saute onions and garlic until fragrant.
2. Add remaining ingredients and cook uncovered for 30 mins or until thickened and syrupy
3. Remove bay leaves and allow to cool slightly
4. Blend either using a stick blender or by transferring to a blender until the desired smoothness is reached.
5. Either can in 4oz jars and process in water bath for 15 mins or store in airtight container in the refrigerator for up to one week. Yields approximately 13 - 4oz jars.
6. Great on ribs and other pork products and chicken.
Use good bourbon. If it's crap to drink it's crap to eat too.
