A nice berry dessert that isn't too rich, but is nice and creamy too.
Blueberry Mix Middle Layer:
Combine all ingredients. Cook while stirring over medium heat until sauce bubbles. Cool.
Crust:
Mash graham crackers and mix with butter. Press crumbles into a 9x13 inch pan.
Cream Cheese Topping:
Mash cream cheese until soft. Add sugar and vanilla. Fold in cool whip.
Putting it all together:
Spread the cooled blueberry mixture over the graham cracker crumb crust. Top with cream cheese/cool whip mixture.
Keep chilled.
Make sure to give the blueberry mixture time to cool before putting it together. I would also let it set for at least an hour before serving to help it stick together and not be a bit runny.
I think you could use other berries in this recipe as well. I haven't tried it yet, but it seems like you could.
