Steele County Fair Purple Ribbon Muffins!
Pre-heat oven to 425 degrees
In mixing bowl combine: flour, sugar, baking powder and salt. Make well in center of mixture. Combine egg, milk and oil. Add all at once to dry ingredients mix only until dry ingredients are moistened. Spoon into greased muffin cups, filling 2/3 full. Bake 20 to 25 minutes or until golden brown.
BLUEBERRY: Add 1 cup fresh or well drained frozen blueberries with milk
OR
Sprinkle 4 to 5 blueberries per cup
