Tasty and delicious oats and oat flour make these muffins a tasty and filling treat! Great for breakfast!
Place chia seeds in a cup with 1/4 cup of water; let sit for 10-15 minutes while preparing other ingredients. Measure 1 cup of oats and blend dry in blender to make oat flour. In large mixing bowl mix out flour with the other cup of oats and add cinnamon, salt, baking powder, baking soda and stevia. In medium mixing bowl mash room temperature banana into smooth mixture. Add milk, vanilla and apple sauce. Mix thoroughly and add re-hydrated chia seeds. Pour wet mix into dry mix and stir thoroughly. Add honey and stir/mix. Add blueberries and walnuts and fold several times evenly distributing chunky ingredients. Spray muffin tin with non-stick oil. Pour mixture into muffin tin and bake at 400 for approximately 25 minutes (or until toothpick comes clean). ENJOY-EEEEEE THEEEESE!!! They are amazingly delicious-O and very healthy!! :)
Feel free to swap berries and nuts with ingredients of your choice, I think dark chocolate chips and sweet potatoes would be fabulous! Have fun!
