This is an old school chili recipe, circa 1905, from Bob's Chili Parlor in Spokane, Washington. Not at all spicy and a couple of interesting ingredients. Vegetarians need not apply.
First prepare the peppers. Take six of the chopped peppers and soak them in 3 cups of warm water for 20 minutes. Pour off the water into a pan and blend peppers until fine. Then simmer the peppers with the 3 cups of water for about 30 minutes until it achieves the consistency of ketchup. Set aside.
Secondly, prepare the herb sauce. Take the mixed herbs and simmer them in 2 cups of water covered for 30 minutes. Strain off the herbs and add the lemon juice to the herb water. Add a pinch of salt and simmer for 10 minutes more. Remove from heat and add the clove oil. Set aside.
Thirdly, prepare the meat. Place the meat, garlic, onion, salt, bay leaves and melted tallow in a large pot. Braise over medium heat for about 35 minutes or until the red color has come out of the meat. Add cumin, oregano and 1 cup of water and braise for another 15 minutes. Then remove the bay leaves and add the pepper sauce. Reduce the heat to low and simmer for 30 minutes. Stir in the beef stock and the remaining chopped pepper along with the ketchup and herb sauce. Continue to simmer on low for 1 hour. Bring the heat up to high and rapidly boil for five minutes and turn off heat. Then let rest for 30 minutes.
Lastly, skim the fat from the top, check for salt and serve.
Don't shirk on the clove oil. It adds a very interesting element! It also has some other uses as well, considering one little bottle of it would probably make fifty batches of this chili.
