Suggest a better description1. In a large pot or Dutch Oven, render the pancetta over medium heat.
2. Add the oil, onions, carrots, celery and herbs and sauté until onions are soft.
3. Combine the ground beef and veal in a bowl and season with salt and pepper.
4. Add meat to the pot and brown on medium-high heat, breaking it up with a wooden spoon as it cooks.
5. Add garlic and cook until fragrant (don't burn!).
6. Add wine and cook until wine is reduced by 1/2.
7. Add tomatoes and basil and stir well.
8. Turn to medium-low heat and simmer for 45 mins, stirring occasionally.
9. Add mushrooms and 1/4 cup of milk and continue to simmer for another 45 mins, stirring occasionally and adding 1/4 cup of milk every 10 mins.
10. Add cream with 5 mins to go.
11. Finish with parmesan cheese.
