Cooked for 4 hours on the stove for a delicious meat sauce for pappardelle pasta.
In a large dutch oven over medium high heat add olive oil.
Once oil is hot add the onions. Saute for around 3 minutes until starting to brown.
Add the carrot and celery and saute another 4 to 5 minutes.
Add 1/2 the wine and stir. Allow the wine to simmer and cook off about 4 to 5 minutes.
Add the butter and let it melt.
Add the meat and break it up with your spoon or spatula.
Cook the meat until it is gray and the water from the beef is mostly gone.
Add the other 1/2 cup of wine stir. Allow the wine to simmer and cook off about 4 to 5 minutes.
Add 1/2 teaspoon each of salt and pepper.
Stir in the tomato paste.
Stir in the canned tomatoes, breaking up the tomatoes with your spoon.
Heat to a boil and then reduce heat and simmer uncovered for 4 hours. Add water periodically if the sauce gets too dry and so it doesn't burn on the bottom of the pan.
Just before serving stir in one cup of milk, turn off the heat, cover and wait until the pasta is ready.
