This is the gravy I use for mashed potatoes and gravy OR biscuits and gravy. Half the recipe if making for mashed potatoes.
Melt margarine in skillet over low heat; add flour and stir until creamy consistency. Continue stirring for a minute or so—this is a very important step because you’re browning it, adding flavor. Gradually add milk. Cook on medium-high heat until bubbling, then cook on low-medium heat until desired thickness.
May add cooked sausage at this time, if making for biscuits and gravy.
After adding flour to melted margarine, continue to stir for a couple minutes to brown it to give it a better flavor.
