Fried boudin balls with cheese in the middle.
Place Boudin in casing on a paper plate and place in microwave for 2-3 minutes (until you hear the first pop). This helps you to better form the balls.
Remove from microwave.
Remove from casing in a bowl. Separate with a fork & allow to cool.
Cut cheese into chunks about the size of one of the little cubes from a Rubic's Cube. Set aside.
Bowl 1: flour
Bowl 2: egg wash
Bowl 3: Panko crumbs mixed with the Tony Cachere's
You are going to make baseball-sized balls. Form ball by placing some of the Boudin in your hand, then put a piece of cheese in it. Continue adding boudin around the cheese, compacting the ball until desired size is formed. Basically, 1 link = 1 ball.
Make all your balls before breading.
Dip ball in flour, then egg, then panko. Repeat for all balls.
Deep fry until golden brown. Place on an aluminum-lined pan with a grate on top (to allow for grease drippings) and place in a 250 oven until ready to serve.
Tony Chachere's is a salty spice. Do not add seasoning to your flour or more than 1 Tablespoon of Tony's to the bread crumbs even though you want to, lol.
