You can substitute spinach if you are not a fan of greens. Ham steaks cook very quickly so they work well on a weeknight.
Pat ham dry with paper towels. Melt 1 tablespoon butter in Dutch oven over medium-high heat. Cook ham until browned, about 3 minutes per side. Transfer to plate and tent with foil.
Add onion and remaining butter to empty pot and cook over medium heat until softened, about 5 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Stir in greens and broth, scraping up any browned bits, and cook, covered, until just tender and wilted, about 10 minutes. Transfer to platter and tent with foil.
Add sugar, mustard and bourbon to empty pot and cook over medium heat until sugar dissolves and glaze is thickened, about 3 minutes. Add ham and cook turning occasionally, until glazed, about 2 minutes. Slice ham into portions. Serve with greens and remaining sauce.
