Remove skins and place pulp in mixing bowl.

Transfer to baking dish (you can pipe into dish using large star tip if desired).
Brush with melted butter and sprinkle with chopped parsley.
Bake at 350 for 20 minutes or until heated through. Increase time to 40 minutes if made the day before and refrigerated.
I cook the sweet potatoes in the Instapot for 20 minutes on high.

Orange juice can be substituted for the bourbon.
