1. Saut? garlic in oil, remove garlic
2. Add bourbon and reduce by half
3. Stir in Beef stock, salt and pepper.
4. Finish with butter and juices from steak
Heat 2/3 cup Bourbon for 1 min.
Ignite for 30 seconds, cover to extinguish
Cook steak, loosely tent with foil.
Pour drippings into bourbon pan add 2 tble. butter and shallots
Cook 2/3 minutes and beef stock 2 minutes
Add butter as needed and any remaining blood from steaks.
