1) first make sauce. pulverize in a blender. place in fridge (preferably overnight)
2) cook grains according to package directions. we like a mixture of brown rice and quinoa, although also have used millet, barley, etc...
3) heat oven to 350. chop tofu (however you like) and pan fry with a little bit of the sauce. add broccoli, beets, and any other veggies that need time to cook. add more sauce. as the veggies are nearing completion, add kale and carrots. add more sauce (if desired). cover and let "steam" for ~5 minutes (or until kale is done).
4) assemble bowls: a) place grains on bottom; 2) layer tofu/veggies on top; 3) sprinkle with chedder cheese. bake in oven until cheese melts.
5) remove from oven and top with almonds. yum!
