Preheat the oven to 150 C / 300 F Gas Mark 2.
Dry the beef and toss in the flour.
Add 4tbsp of oil to a large casserole dish and brown the beef.
Remove from the pan. Add the pancetta and brown
Add the vegetables and saute until golden
Return the beef to the casserole dish. Pour over the wine and reduce by half
Add the anchovies, Worcestershire Sauce, tomato puree,bouquet garni and stock
Bring to the boil, season and cover
Place in the oven for 2.5 hours
Remove the casserole from the oven and check the seasoning
Discard the bouquet garni and ladle into a warm serving bowl
