Suggest a better descriptionWhen I was a child, my Sicilian grandmother made this. Its used for several different dishes. Take a couple heads of garlic and break them apart. Peel the individual cloves and put them into a small covered baking dish with some white wine; enough to moisten the bottom of the pan. Bake at about 300 for 25 minutes or so. The garlic will have the texture of a smooth puree or custard. Spread it thinly on bread as an accompaniment to garlic soup (or any soup). Or, spread it on some bread, trickle with olive oil and bake briefly for another kind of garlic bread. Stir some into any soup. Add some to mayonnaise or salad dressing. Spread a thin layer on the dough for homemade pizza. Throw some into bread dough and knead it throughout. Brush on a piece of fish before baking. Posted to EAT-L Digest 24 Aug 96 From: Bob Pastorio
