Preheat oven to 400.
Place pears, cut side down in 9x13 baking dish. Sprinkle with sugar and dot with butter. Bake 35-40 minutes until tender.
Remove from oven and reduce heat to 350.
Pour 1 cup whipping cream over pears and return to oven for 10min. or until sauce is thick and caramel colored, basting pears a few times.
Allow to cool.
Whip remaining cream with Cognac,honey and vanilla.
Serve pears at room temperature with a dollop of whipped cream
