Very high fiber, low fat and delicious. These will get you moving!
Preheat oven to 400. Lightly grease 12-cup muffin pan.
In large bowl, sift together first six ingredients. Stir in wheat bran and flaxseed powder* and mix well.
In small bowl, combine next five ingredients, whisking to blend. Pour all at once into dcry mixtgure, sirring just until combined. Stir in chopped prunes.
Evenly divide into muffin cups and bake approximately 15 minutes, or up to 18 minutes for a crispier top. Remove muffins from pan immediately onto wire cooling rack.
Each muffin is approximately 230 calories.
*Be sure to use flaxseed meal (powder). Whole flaxseeds are very hard to digest, but the powder/meal, is not.
