Sweat the leek and garlic, add all the spices (I actually ground mine up today because I had mustard seeds but not powder, so I ground them all together with the salt and pepper), tom paste, herbs, vinigar and sugar. give a min or two then add the cans of toms and stock. I make sure it tastes like I want it and then I add the cans of drained beans and let it bubble for about 20 mins or so.
It is best made the day before so the spices can mature. And I have previously put some in a ramikin cracked in a raw egg, topped with a splash of cream, salt and pepper and baked until the egg was done.
