Broil the bacon until it's just crisp. Place on paper towels, wrap it
loosely and keep in a warm oven.
Whip up the eggs and scramble them in a saute pan over a medium high
burner. Move them as they cook just until they firm up. Warm the tortillas
in the oven with the bacon. Lay the tortillas out flat on the counter.
Place 2 slices of bacon on each, parallel to your body. Split the scrambled
eggs between the two tortillas and place them on the bacon. Top the hot
eggs with some of the grated Mexican cheese blend. Spread about a
tablespoon of the salsa next to the eggs and cheese. Begin wrapping from
the end closest to your body. About half way in the wrapping, fold in the
two edges, then finish wrapping. These can now be cut in half and served
right away. Or, wrap them in foil or waxed paper and send your crew on
You can use any salsa you like. Be creative. If you'd like a more substantial burrito, consider frying up some chopped onions before you add the eggs. Even fried potatoes or chopped and sauteed mushrooms will work in this recipe. Experiment.
