Wash bell pepper, onion and garlic; chop bell pepper and onion, and mince garlic.
Heat oil in skillet over medium-high heat and sauté vegetables until tender
Add egg substitute and cilantro to skillet and continue to cook, stirring, until egg is set.
Remove from heat and place 1/2 of the cooked egg mixture down the center of each warmed tortilla; top each with half of the salsa, cheese, and black pepper, to taste.
Roll up tortillas and enjoy with fresh grapes (washed).
