In a large skillet, cook the sausage over medium heat, stirring frequently, until browned and crumbly, about 10 minutes; drain well on paper towels. Then do the same with the bacon.
Cut and discard the crusts from the bread. Cut the slices into cubes, and layer in the prepared baking dish. Sprinkle with the sausage, bacon and 1 cup of cheese.
In a large bowl, whisk together the eggs, milk, mustard, salt and pepper; carefully pour the mixture over the cheese.
Cover and refrigerate at least 2 hours or up to over night.
Stir a little milk into soup and spread gently over casserole with a 1/2 cup cheese.
Bake casserole in preheated 350° oven until set and golden, about 40 minutes.
Let stand for 10 minutes before serving.
