Fairly easy polish take on eggs Benedict. Instead of hollandaise and an english muffin, this recipe aims to add body and flavor by using a mushroom soup style gravy and polish pierogi. Particularly good on a cold morning, with a nice cup of coffee.
All you will need for this recipe is a medium (12'') cast iron pan.
Begin by cooking all three slices of bacon over medium high heat. Do not drain the pan. Once bacon is well cooked, remove bacon and place on paper towels to cool. Reduce to medium heat.
Over medium heat, Add pierogi (Alexandra's Potato and cheese homestyle - available at any Polish grocery). Cook all three sides of the pierogi until golden brown, about 15 minutes total.
While pierogi are cooking, add mushroom halves and cook for about 2 minutes on each side or until gold and cooked through. Remove mushrooms and pierogi and drain all the oil - there will be a residual amount remaining. Over high heat, cook asparagus by searing on two sides, about 2 minutes per side. Remove asparagus and let the pan cool slightly.
Over medium low heat, add butter and cook eggs to your desire (I like mine over-easy, but for this recipe I suggest over medium, just enough so the yolk is slightly jello like).
Remove eggs, drain butter, and add the condensed soup, cream, mushrooms (from earlier), a dash of salt, a dash of pepper, and water. Keep over low heat until the gravy begins to simmer (do not boil).
While waiting for the gravy to simmer, chop one of the bacon slices and add to the gravy. Chop the asparagus into 1 inch pieces.
Once everything is ready, assemble bacon, pierogi, with egg on top. Add asparagus and pour gravy over top.
