Cook rice and set aside. In a large skillet cook the bacon over medium heat. Once the bacon has browned, drain half the oil and push the bacon to one side of the skillet. On the other half of the skillet, add the 3 eggs and scramble until cooked. Turn the heat down to low. Add the rice until all ingredients are mixed. Add the soy sauce evenly over the rice and mix until the rice takes on a light brown color. Add the chopped green onion. Salt and pepper to taste. Serve with hot sauce – either Sriracha or Frank’s Red Hot.
