preheat oven to 350. line 2 cookie sheets with parchment paper. in a large bowl combine eggs, brown sugar, butter and vanilla. stir in dates. In a medium bowl, combine the next 6 ingredients (through cinnamon). Add flour mixture to date mixture, stirring until moist. Stir in pecans. Using a scant 1/4 cup measure or scoop, drop dough into mounds about 3 inches apart on prepared cookie sheets.
Bake 10-12 or until. edges are golden. cool on cookie sheets 1 minute. remove and cool on wire rack.
to store, layer cookies between sheets of waxed paper in an airtight container; cover. store at room temp up to 2 days or freeze up to 3 months.
*before freezing, portion individual cookies in small resealable freezer bags to grab on the go.
