Preheat oven to 400 degrees
Roll out puff pastry into a large square or rectangle. Fold each edge up 1 inch on all sides. Press down with a fork. Using a fork, prick the interior of the pastry to prevent rising.
Spread cheese all over the base of the galette. Spread cooked bacon over the surface. Add sliced tomatoes. Place galette in oven for 15-20 minutes or until crust is browned.
Meanwhile, heat butter in a small non-stick skillet. Once melted, add eggs and SLOWLY & GENTLY scramble until softly cooked. They should be a bit runny.
Remove galette from oven and top with eggs. Sprinkle with shredded basil. Drizzle with olive oil. Cut & serve.
