1.Prepare potatoes ahead of time.
2. Brown pork sausage and remove from pan let drain.
3.Sauté bell peppers and mushrooms in the fat from meat.
4. Add meat back into the peppers and mushrooms and add the potatoes, turn on low. Stir occasionally.
5. Make poached or fried eggs to top the hash.
6. Serve warm with cheese, salsa, or sour cream. Enjoy!
