Mix together first 5 ingredients. In a separate bowl, mix the remaining ingredients. Make a well in centre. Add first mixture to the well in second bowl. Spoon into 16 medium muffin cups and Bake at 350 degrees for 20-25 minutes or until toothpick in centre comes out clean. Remove from pan and cool on cooling rack.
These muffins don't get really big and fluffy.
