Bake potatoes for 45 mins - 1 hour at 375. Let cool (may chill over night). Grate entire potatoes into large mixing bowl.
Preheat 425.
Combine potatoes, salt, pepper, sour cream, green onions, and cheese. Mix well. Spoon into 2-quart glass casserole dish. Pour butter over top.
Bake at 425 for 25 mins or until nicely browned.
