Suggest a better description--THE NIGHT BEFORE--
1) Peel and quarter the potatoes.
2) Microwave for approximately 4 minutes. You'll know it's done when you insert a knife into the thickest part of the potato and it goes through with some resistance.
3) Cover and refrigerate for use the next day.
--THE NEXT MORNING--
1) Dice the potatoes
2) Add seasoning
3) Grease the pan and fry those suckers until red/brown
