Heat skillet to medium high heat and add a splash of olive oil. Brown the Chorizo and remove (about 5 minutes).
Add butter and melt. Add potatoes and begin to brown (2 minutes). Add onion and pepper and cook till onion is translucent (about 5 minutes). Return meat, add salt and pepper; cover and reduce heat to medium low for 15 minutes or until potatoes are done.
(Optional) add scrambled eggs and serve.
