Puncture crust with fork to keep from puffing, and pre-bake crust for 10 minutes at 400 degrees.
Preheat oven to 375 degrees.
Crumble bacon and sprinkle in pie shell.
Layer onion slices and then add cheese.
In mixing bowl, beat eggs, half and half, and add seasonings until well blended.
Slowly pour into pastry shell (all 1/4 inch at edge). Dot quiche with cubes of butter.
Bake for 30 minutes or until top is puffed, brown, and the center is set.
You can substitute bacon with spinach, crabmeat, shrimp, etc. Pat always made this with bacon and spinach.
