Make homemade corn tortillas (recipe provided) and line bottom of greased casserole dish. Scatter pickled jalapenos over tortillas, reserving 3 tablespoons of juice. Cover contents of dish with cheese, then add drained black beans and tomatoes. Spread evenly. Beat dozen egg whites and six yolks with the reserved jalapeno juice, adding some salt and pepper to taste. Pour egg mixture over contents of casserole dish and top with dried oregano. Place in 350 degree oven for 35 to 45 minutes, depending on oven cook time. Let stand for ten minutes and serve!
