Oatmeal muffins topped with fruit. Pulled off of Tip Hero.
Preheat oven to 350 degrees. Mix eggs and brown sugar. Add apple sauce, milk, vanilla, salt, cinnamon and mix thoroughly. Mix in oatmeal and baking soda. Let sit for 30 minutes. Spray 12 large muffin cups. Fill with 1/4 cup of mixture. Top with dry fruit, nut, chocolate chips, fresh berries, etc. Bake for 30 minutes for until done.
