Preheat cast iron oven with 1 cube fat or 1 teaspoon oil.
Brown meat cubes well - keep sizzling
Then add water and lower heat to simmer.
Add spices and seasonings. simmer for two hours, stirring occasionally.
Then add onions, carrots, potatoes and simmer for 25 minutes. Keep an eye on it! you don't want the veggies to mush up.
Remove bulky items. Discard bay leaves. If serving formally, separate carrots and onions into one serving bowl, meat and potatoes in another.
Slowly work in 4 tablespoons flour to thicken, cook 5 minutes.
Salt and Pepper to taste.
Reduce to consistency of soft carmel.
If serving informally return bulk items to pot, stir
Substitute red wine for the water.
Make sure you boil off extra water or add more to get rich consistency when making gravy. Keep an eye on the veggies so they don't mush up.
