In a large (4 cup) measuring cup, whisk together 1 cup 1% milk, 1/2 cup water, 2 large eggs, 2 tsp sugar, 1/4 tsp salt, 2 tsp melted butter, 1 cup flour.. put in fridge for an hour...
melt 3 tsp butter - heat crepe pan, brush with melted butter, pour 1/4 batter in pan, cook 2 minutes, flip, cook 1 minute more... cook all crepes first
slice 2 granny smith apples very thin, slice a wedge of brie cheese
spread crepe with some apple butter, put apple on it, add brie, fold over, and cook - on low broil, until cheese is melted...
You can serve them with cranberry chutney - don't skip the chutney if you can find it!!
You can add sliced pork tenderloin for Dennis' since he likes meat, you could add shredded chicken too
