turn dough out onto a lightly floured surface and knead until smooth about 2 minutes. Roll out 1/4" thick and cut out biscuits with 3 to 4 inch gingerbread man cookie cutter.
Transfer half of biscuits to prepared baking sheets
Bake in upper and lower thirds of oven 25 minutes. Turn oven off and leave treats in oven 30 minutes more to crisp. Bake remaining biscuits in same manner. Strore cooled treats in an airtight container at room temperature up to a month or in the freezer tor up to 6 months.
