Suggest a better descriptionCook rice according to directions, set aside. Melt the butter. Add flour and stir until thoroughly mixed. Cook about two minutes, then allow to cool slightly. Add mixture to simmering milk a small amount at a time. Whip to break up all the lumps then whip in the eggs until creamy and smooth. Let simmer about 10 to 15 minutes. Place spinach in bottom of 9 x 13 casserole dish. Add rice, feta, cheese and green onions spreading equally over spinach. Salt and pepper to taste. Pour cream sauce over top.
