Bruschettta wth Watermelon and tomato salsa, Garlic and mashed pea/ red radish, Cream cheese oR (Feta/ green verde) and beetroot/caramelized onion
1) Watermelon and tomato salsa- CHopped them in cubes , season with olive oil, squeeze of lemon, salt nad pepper, 1 tsp of balsamic vinegar
Spread garlic on toasted crostini, put 1 tbs of watermelon tomato salsa on it, garnish with baby peppermint
2) Cook peas with butter, salt n pepper, cool it, and mashed it.
Spread green verde on crostini, put 1 tbs of mashed pea on it, garnish with red radish sliced round( if its too big , then half them) arrange them properly
3) Cook the onion til slightly brown, then add 1 tbs sugar, and pinch of salt. slightly cook beetroot ( chck wther cubes or julienne looks better??, squeeze some lemon , pinch of salt.
Spread cheese on crostini, put jus few pieces of cooked beetroot, garnish with caramelized onion
Bruschetta has to be colorful , full and inviting before eating
