Suggest a better description1. Bring a large pot of salted water to a boil. Add pasta and cook as label directs, adding broccoli in the last 3 minutes of the cooking. Reserve 1 cup of pasta water then drain.
2. Meanwhile melt the butter in large saucepan over medium heat. Add pancetta and cook, stirring occasionally,until golden and golden browned and slightly crispy about 5 minutes. Transfer to paper lined plate using slotted spoon. Reserve the dripping.
3. Add scallions whites to the pan 1/4 teaspoon salt and a few grinds of pepper. Cook until slightly softened about 1 minute. Whisk in flour and mustard, cook whisking until flour is lightly toasted about 2 minutes. Whisk in milk and reserved pasta water cook until slightly thickened about 5 minutes. Add cheese cook until creamy about 2 minutes.
4. Stir pasta broccoli and pancetta into cheese sauce. Season with salt and pepper. Serve topped with scallion greens.
