Vegan and delicious.
1. Soak cashews in water 30 minutes or overnight.
2. Heat oil in large pot over medium high heat. Add onion & a pinch of salt. Sauté about 3 minutes.
3. Add celery & carrots. Sauté another 5 minutes.
4. Add garlic & broccoli. Sauté another 5 minutes.
5. Add 5 cups of vegetable broth, salt, & pepper. Stir & bring to a boil, then reduce heat to low & simmer covered 15 minutes.
6. Drain cashews & place in Vitamix with 1 cup vegetable broth. Blend until smooth & creamy. There should be no clumps. Set aside.
7. Purée soup with immersion blender.
8. Stir in cashew cream. Season to taste.
