This is fun food for fancy hobos! We cooked it in the oven but it would work on the grill or campfire over indirect heat as well.
Oven to 400
Spray 4 large sheets of heavy-duty foil with non-stick spray
Combine stuffing mix and water to moisten. You can increase the amount of stuffing you like, just moisten.
Put half of the stuffing mix onto the center of each foil sheet.
Top stuffing with a 6oz. chicken breast half.
Top chicken with 1 c. broccoli (I cut mine in small bites).
Sprinkle each breast with 1/2 of the cheese and 1/2 of the bacon crumbles.
Drizzle with 1 T. ranch dressing each
Bring up foil sides and fold to seal, leaving room for heat circulation inside
Place packets on a cookie sheet and bake 25-30 mins
Remove packets and let stand 5 mins
Cut sits in foil for steam before opening.
I think this would be a great camp meal as well. You can prep most of the ingredients ahead!
