Great tasting salad perfect for bbq's or potlucks.
Place cut bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and set aside.
Place shredded carrot on a kitchen towel (flour sack towel works great), roll up and wring dry.
In a bowl combine the broccoli, onion, dried cranberries and shredded carrot.
In a small bowl, whisk together the mayonnaise, vinegar and sugar.
Pour over broccoli mixture, and toss until well mixed.
Refrigerate for at least two hours.
Before serving, toss salad with crumbled bacon and sunflower seeds.
You can add fresh sliced grapes in place of the dried cranberries and you can use any toasted nut in place of the sunflower seeds.
