Suggest a better description1. Heat oil in a large pan, add onions and cook until soft.
2. Add celery, leek, potato and butter. Stir until melted.
3. Cover with lid and sweat veg for 5 minutes. Remove lid.
4. Pour in the stock and add and chunky bits of broccoli stalk. Cook for 10-15 minutes until all the veg is soft.
5. Add rest of the broccoli, cook for a further 5 minutes.
6. Transfer to a blender and blitz until smooth.
7. Crumble and stir in the Stilton, allowing a few lumps to remain.
8. Season with black pepper, serve hot with crusty bread.
