This is so simple and delicious. It's one of my "go to" for a quick snack or even a small meal. You won't even believe how much flavor the capers, onions, herbs, lemon, and Olive oil will infuse into this quick as a flash dish.
Turn the broiler on to high with the rack on the top level of the oven. Drain the tuna/sardines of the liquid. Add a few capers, some diced onion, chopped parsley, a squeeze of lemon, and a drizzle of extra virgin olive oil. Place the can on an ovenproof dish or pan and place under the broiler for a few minutes until hot and bubbly. Save some of the parsley, capers and onions to add after it's cooked for that fresh crunch and flavor.
Serve it with your choice of crackers or toasted bread. Sometimes I also spread mayonnaise on the cracker for that extra deliciousness.
NOTE: Try this with Rosemary, Thyme, or Dill. Or a combination of herbs that you like. It's delicious, easy, and super fast.
