heat olive oil, brown meat on all sides - remove meat
onion, celery and carrots sliced in dutch oven until onion translucent
add tomato paste, white wine and thyme, reduce by 1/2
return meat add chicken stock up to 3/4 of meat
350 oven, turning every 40 minutes until meat falls off bone
blanche fava beans and add to stew at last 10 minutes
good with toasted bread
